Whisk together 3 eggs with ¼ cup of AE Cottage Cheese. Melt a little butter in a skillet, or spritz generously with cooking spray, and add the egg mixture. Without stirring, gently push cooked portion of the eggs to the center of the skillet and continue until all eggs are fully cooked but not dry. Sprinkle with salt and freshly ground pepper to taste.
